Apricot & Thyme Shortbread Cookies

These Apricot & Thyme Shortbread Cookies are a delicate blend of sweet and savory flavors, combining the richness of butter with the natural sweetness of dried apricots and the subtle earthiness of fresh thyme. A perfect little bite, especially alongside a cup of tea.

Prepares 12 cookies

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened (my favorite for baking is Vital Farms butter)

  • 1/4 cup granulated sugar (can be substituted with coconut sugar for a lower glycemic option)

  • 2 tablespoons light brown sugar, packed

  • 1 cup all-purpose flour

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 cup finely chopped dried apricots

  • 1/2 tablespoon fresh thyme leaves, roughly chopped

Instructions

  1. Cream the butter, granulated sugar, and brown sugar together in a medium bowl using an electric mixer until light and fluffy.

  2. Add the vanilla extract to the butter mixture, mixing until combined.

  3. In a separate bowl, whisk together the flour and salt.

  4. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.

  5. Fold in the chopped dried apricots and thyme until evenly distributed throughout the dough.

  6. Turn the dough out onto a lightly floured surface and gently knead it into a ball. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for about 20 minutes to firm up.

  7. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  8. Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use a cookie cutter to cut out shapes and place them onto the prepared baking sheet.

  9. Bake for 10-12 minutes, or until the edges are lightly golden.

  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
