Ingredients

Salad Base:

  • 4 tomatoes on the vine, sliced in wedges

  • 6 mini cucumbers, sliced in half horizontally

  • 1/4 cup feta cheese

Dressing:

  • 1/4 cup olive oil

  • Juice from 1 lemon

  • 1 teaspoon honey

  • 1 teaspoon dijon mustard

  • 1/4 teaspoon thyme

  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad Base:

    • Place the tomato wedges, snow peas, and mini cucumbers in a large salad bowl.

    • Sprinkle the crumbled feta cheese over the vegetables.

  2. Make the Dressing:

    • In a small bowl or a jar with a lid, combine the olive oil, lemon juice, honey, Dijon mustard, thyme, salt, and pepper.

    • Whisk or shake well until the dressing is fully emulsified.

  3. Assemble the Salad:
