Za'atar Chickpeas

Ingredients

  • 2 cups cooked chickpeas (or one 15-ounce can, drained and rinsed)

  • 2 tablespoons olive oil

  • 2 tablespoons za'atar seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon sea salt or to taste

  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Pat the chickpeas dry with a paper towel to remove excess moisture. This will help them get crispy.

  3. In a large bowl, toss the chickpeas with olive oil, za'atar, garlic powder, smoked paprika, salt, and pepper until evenly coated.

  4. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.

  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the chickpeas are golden and crispy.

  6. Remove from the oven and let cool slightly before serving. Enjoy as a snack or add to salads for extra crunch!
