Gingery Brazil Nut Granola

Prepares 4 cups

Ingredients

  • 2 1/2 cups rolled oats

  • 1/2 cup shredded unsweetened coconut

  • 1/2 cup dried cranberries (or dried fruit of choice)

  • 1/4 cup raw Brazil nuts, chopped

  • 1/4 cup maple syrup

  • 2 tbsp oil of choice (coconut or avocado oil work well here)

  • 1 tbsp ground ginger

  • 1 tbsp vanilla extract

  • 1/4 tsp salt or to taste

Directions:

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped Brazil nuts, shredded coconut, and pumpkin seeds.

  3. Combine Wet Ingredients: In a small bowl, whisk together the maple syrup, melted coconut oil, ground ginger, vanilla extract, and salt.

  4. Mix Together: Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.

  5. Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.

  6. Cool and Add Dried Fruit: Remove from the oven and let the granola cool completely. Once cooled, stir in the dried cranberries if using.

  7. Store: Transfer the granola to an airtight container. It will keep for up to two weeks.
