Gingery Brazil Nut Granola
Prepares 4 cups
Directions:
Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped Brazil nuts, shredded coconut, and pumpkin seeds.
Combine Wet Ingredients: In a small bowl, whisk together the maple syrup, melted coconut oil, ground ginger, vanilla extract, and salt.
Mix Together: Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.
Cool and Add Dried Fruit: Remove from the oven and let the granola cool completely. Once cooled, stir in the dried cranberries if using.
Store: Transfer the granola to an airtight container. It will keep for up to two weeks.
