Honey Herb Carrots

Prepares 4-6 servings

Ingredients:

  • 1 pound rainbow carrots, peeled

  • 2 Tablespoons olive oil

  • 2 Tablespoons of honey

  • 1 Tablespoon rosemary

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon oregano

  • 1/2 teaspoon thyme

  • 1/2 teaspoon crushed red pepper flakes

Directions:

  1. Preheat oven to 375 degrees. Like a baking sheet or casserole dish with parchment paper.

  2. Add peeled carrots into a mixing bowl. Add in all other ingredients - olive oil, honey, rosemary, thyme, red pepper flakes, salt and pepper.

  3. Mix well and add to lined baking pan.

  4. Bake for 20-25 minutes or until fork tender.
